Ingredients
- Blueberries
- Bacon
- Maple Syrup
- 3 large free-range eggs
- 200g self-raising flour
- 1 ½ tsp baking powder
- Sprinkle of salt
- 1 tbsp caster sugar
- 25g melted butter
- 200ml milk
- Sprinkle of icing sugar
Method
- In a large bowl mix together all the dry ingredients (flour, baking powder, sugar and a sprinkle of salt)
- In a small bowl crack in the 3 eggs and whisk with a fork
- Using a spoon create a well in the centre of the mixed dry ingredients
- Then pour in the melted butter, milk and eggs, slowly whisking together by hand or electric whisk
- In the small Skillet heat up a little bit of vegetable oil and start to fry the bacon for 5 minutes
- Over a hot Kadai heat up a knob of butter in the Frying Pan
- Place 4 tbsp of pancake mixture into the pan and fry on one side for a couple of minutes
- Then slip over using the Kadai Spatula and fry for another couple of minutes
- Once the pancakes are ready layer them with bacon and maple syrup
- Finish with a sprinkle of blueberries
