Fluffy American Pancakes with Blueberries and Bacon - Serves 2

  • Blueberries
  • Bacon
  • Maple Syrup
  • 3 large free-range eggs
  • 200g self-raising flour
  • 1 ½ tsp baking powder
  • Sprinkle of salt
  • 1 tbsp caster sugar
  • 25g melted butter
  • 200ml milk
  • Sprinkle of icing sugar


  1. In a large bowl mix together all the dry ingredients (flour, baking powder, sugar and a sprinkle of salt)
  2. In a small bowl crack in the 3 eggs and whisk with a fork
  3. Using a spoon create a well in the centre of the mixed dry ingredients
  4. Then pour in the melted butter, milk and eggs, slowly whisking together by hand or electric whisk
  5. In the small Skillet heat up a little bit of vegetable oil and start to fry the bacon for 5 minutes
  6. Over a hot Kadai heat up a knob of butter in the Frying Pan
  7. Place 4 tbsp of pancake mixture into the pan and fry on one side for a couple of minutes
  8. Then slip over using the Kadai Spatula and fry for another couple of minutes
  9. Once the pancakes are ready layer them with bacon and maple syrup
  10. Finish with a sprinkle of blueberries
