Spiced Plum & Ginger Gin Fizz


Plum puree

  • 600g red plums
  • 1 tbsp grated ginger
  • 70g sugar
  • 1 tbsp lemon juice



  1. Over a hot Kadai, combine the plum, ginger, sugar, and lemon in a skillet
  2. Cook on medium heat for about 15 minutes, stirring occasionally
  3. Transfer the contents to a blender and create a puree
  4. Let the puree cool this will be enough for 6-8 cocktails
  5. Slice up a plum and place the slices on the grill for a few minutes
  6. Meanwhile, in a cocktail shaker add the plum purée and mint leaves, then fill with ice
  7. Pour in the gin
  8. Shake well to combine the flavours, then pour into a chilled glass
  9. Top off with tonic water, ice, more mint, and a slice of grilled plum
