Shakshuka

Ingredients

  • 3 tbsp olive oil
  • 1 onion
  • 2 garlic cloves
  • 1 chilli
  • 1 red pepper - diced or finely sliced
  • 1 yellow pepper - diced or finely sliced
  • 1 tsp paprika 
  • Salt and pepper
  • 1 ½ tin of plum tomatoes (roughly chopped )
  • 4 eggs
  • Sprinkle of parsley

Method

  1. Heat the oil in the Tripod Skillet, add the onion, chilli and garlic and fry until golden.
  2. Add the peppers. When they are soft add in the tomatoes and spices
  3. After a few minutes break eggs into four wells, season generously.
  4. Raise the Tripod Skillet to avoid burning the mixture, simmer for 10 mins using foil to cover the top of the skillet.
  5. Sprinkle with parsley/ coriander.
