Zhara Roasted Mixed Vegetables - Serves 4

Preparation time: 10 minutes

Cooking time: 15 minutes

Ingredients

  • 2 large courgettes
  • 4 peppers any colours
  • 2 aubergines
  • 2 red onions
  • 3 garlic cloves (optional)
  • Mixed herbs (we like oregano, basil and thyme)
  • Olive oil

Method

  • Cut all the vegetables into bite sizes pieces and mix up with herbs and oil in a bowl (if camping use a plastic bag!).
  • Heat up the Zhara Roasting Pan having brushed it with oil.
  • Cook vegetables and keep warm using the lid.
