Spicy Veggie Sausage and Bean Casserole - Serves 4

Preparation time: 10 minutes

Cooking time: 25 minutes

INGREDIENTS

  • 2 Cans of Spicy bean mix
  • 1 Can chopped tomatoes
  • 6 Veggie sausages
  • Drizzle of olive oil
  • 1 Red pepper
  • 1/2 Packet of Mushrooms
  • 1 White onion
  • 1 Chilli
  • 3 tbsp. Paprika
  • 2 tbsp. soy sauce
  • 2 tbsp. Balti paste
  • 4 portions of couscous

METHOD

  1. Heat up your oiled grill trays over a medium - hot Kadai
  2. Cut up the peppers. onion and sausages and put with the oil into a hot cooking bowl over the Firebowls for 4 mins.
  3. Then add the mushrooms, soy sauce and paprika and cook for a further 6 mins.
  4. Once the vegetables are cooked add the Balti pasta, can of chopped tomatoes and both cans of the spicy beans and cook for a further 5 mins.
  5. While the bean casserole cooks prepare 4 portions of couscous using hot water.
  6. Once the casserole is cooked and heated through serve with the couscous and enjoy.
