Rice Stuffed Peppers - Serves 3

Preparation time: 10 minutes

Cooking time: 45 minutes

INGREDIENTS

  • 3 Mixed peppers
  • 1 Packet mushrooms
  • 2 White onions finely chopped
  • Mixed Chilli
  • 1/2 Lime juice
  • Sprinkle fresh coriander
  • Handful Pine nuts
  • 75g Rice
  • 1 Packet Mozzarella
  • Guacamole

METHOD

  1. Heat up your oiled grill trays over a medium - hot Kadai
  2. In a skillet add some oil and onions and cook for 4 mins
  3. Add the mushrooms and chillies and cook for a further 6 mins.
  4. Then add the fresh coriander, lime juice and pine nuts and cook further 5 mins.
  5. Pre cook the rice.
  6. Mix together the cooked veg and rice.
  7. Carefully cut and hollow out the peppers keeping the top piece and add the rice mix to the centre.
  8. On top of the rice add a thin piece of mozzarella and guacamole.
  9. Put the top of the peppers back on
  10. Wrap the peppers in foil and cook on the swing grill.
  11. Cook on there for 25- 30 mins.
  12. Take the peppers off the heat, unwrap and serve.
