Minestrone

INGREDIENTS

  • 4tbsp olive oil
  • 1 medium onion, diced
  • 3 medium carrots, diced
  • 2 celery sticks, diced
  • 1 litre of vegetable stock
  • 4 small potatoes, diced
  • 4tbsp homemade tomato sauce, or 2tbsp tomato puree
  • 1 large courgette, diced
  • 100g green beans, diced
  • 100g cabbage, shredded
  • 450g cannellini beans
  • You can add any other seasonal vegetables of your liking
  • Salt & pepper to taste

METHOD

  1. Dice all the vegetables the same size.
  2. Put the olive oil in the cooking bowl, followed straight away by the onion, carrot and celery. Sautee these, stirring frequently for 3 minutes.
  3. Now add the stock and the diced potatoes. Simmer for 20 minutes.
  4. Now add the sauce or puree, all the diced green vegetables and the tin of beans, including their water.
  5. Put the olive oil in the cooking bowl, followed straight away by the onion, carrot and celery. Sautee these, stirring frequently for 3 minutes.
  6. Season with salt and pepper, add a little more stock if necessary and simmer for another 15 minutes.
  7. Serve each portion with a drizzle of olive oil.
