Chachouka - Serves 4

Preparation time: 10 minutes

Cooking time: 30 minutes

Ingredients

  • 3 tbsp olive oil
  • 1 onion
  • 2 garlic cloves
  • 1 red pepper - diced or finely sliced
  • 1 yellow pepper - diced or finely sliced
  • 1 ½ tin of plum tomatoes (roughly chopped )
  • 4 eggs

Method

  1. Heat the oil in the Tripod Skillet, add the onion and garlic and fry until golden.
  2. Add the peppers. When they are soft add in the tomatoes.
  3. After a few minutes break eggs into four wells, season generously.
  4. Raise the Tripod Skillet to avoid burning the mixture, simmer for 10 mins using foil to cover the top of the skillet.
  5. Sprinkle with parsley/ coriander.
