Kadai Tabletop Partridge Wraps

Preparation time: 15 minutes

Cooking time: 20 minutes


  • 4 Partridge breasts
  • 2 tsp dijon mustard
  • 1 tsp harissa paste
  • 1/4 tsp sumac
  • Juice of 1/2 lemon
  • 4 sandwich wraps
  • 2 mozzarella balls
  • Creme fraiche
  • 1 x squash
  • Olive oil
  • Salt & pepper


  • Rub the partridge with the dijon, harissa, sumac and lemon juice
  • Chop your chosen squash into wrap size chunks, drizzle with oil and season with salt and pepper
  • Tear the mozzarella into smaller chunks
  • Prepare an even bed of coals in your tabletop Kadai and put the grill on
  • First cook off your squash, about 10 mins on each side
  • Add your partridge breast to the grill, 5 mins on each side
  • Remove your squash and partridge from the grill
  • Place one wrap at a time onto the grill, then the mozzarella, partridge and squash
  • Drizzle on some creme fraiche
  • Fold the wraps on the grill with your tongs
  • Remove wrap from the grill, allow to cool and enjoy!
