Chicken and Vegetable Stir Fry - Serves 4

INGREDIENTS

  • 300g Diced chicken
  • 2 Carrots
  • 1 Orange pepper
  • 1/2 Broccoli
  • 1/2 Packet Mushrooms
  • 1/2 Lime
  • 2cm Ginger
  • 1 tbsp. Rice vinegar
  • 6 tbsp. Soy sauce
  • 2 tbsp. sesame seeds oil
  • 2 Garlic cloves
  • 1 Chilli finely chopped
  • 2 Packets fine udon noodles

METHOD

  1. Start by chopping the chicken into small cubes.
  2. Add the chicken with a drizzle of oil to the cooking bowl.
  3. Meanwhile as the chicken is cooking, cut up carrots, pepper, broccoli and mushrooms.
  4. Once the chicken has been nearly cooked through add the peppers and carrots.
  5. In a small bowl mix together the gated ginger, rich e vinegar, soy sauce, sesame seed oil and crushed garlic gloves.
  6. After cooking for 5 mins add the mushrooms and broccoli and sauce to the stir fry.
  7. Cook until the chicken is cooked and vegetables are soft, then move form the heat and serve.
